MEMPHIS, Tenn. (NBC News) — How does someone go from working in corporate America to becoming one of the nation’s most creative and renowned chocolatiers?

It takes a lot of hard work and determination.

After earning a degree in chemistry and then spending a decade in big business, Memphis’s Phillip Ashley Rix had an epiphany.

“Woke up, 3 o’clock in the morning, one day and said, ‘I’m going to be a chocolatier for the rest of my life’ and proceeded to spend the next three years, roughly, give or take, teaching myself everything about chocolate,” Rix says.

Drawing inspiration from his family, which loved to cook, Phillip Ashley Chocolates was born.

He quickly gained a reputation for creating beautiful and tasty handcrafted treats, pairing chocolate with unusual ingredients like sweet potato…a tribute to his grandmother.

“That’s literally the first chocolate that I made when I said ‘You know what, Okay, I’m ready to go and do my own thing,'” he recalls.

Chef Phillip says cooking with chocolate and experimenting with different pairings is a great family activity, and it’s kept him connected to his.

“The main thing that I always try to tell people is be fearless in the kitchen,” he says.
