When is your leftover turkey no longer safe?

(CNN) – Thanksgiving was only yesterday, but it’s not too early to be talking about all those leftovers and food safety.

Health experts are reminding people of some of the guidelines when it comes to handling and storing extra food.

For example, if you’re not using a warming tray, turkey leftovers should be put in the refrigerator or freezer within two hours. This helps slow down bacterial growth.

One United States Department of Agriculture food safety expert says Thanksgiving leftovers are safe in the refrigerator for up to four days.

If you freeze them, the leftovers should be eaten within six months, but they will need to be reheated to 165 degrees before eating.

The two-hour refrigeration rule applies to side dishes like dressing and green bean casserole as well.
