Kitchen Guy: Food Processor Appetizers

Smoked Salmon Mousse

1/2 lb. smoked salmon
2 Tbsp shallot, finely diced
1/2 Tbsp fresh dill, chopped
2 oz freshlty squeezed lemon juice
1/2 cup heavy cream

Crumble the salmon into the bowl of your food processor and add the shallots, dill, and lemon juice. Cover and pulse a few times, then with the motor running, slowly add the cream. When the mixture has thickened, it’s done! Serve with your favorite crackers or mini rye bread.

Food Processor Tapenade

1 cup pitted Kalamata olives
2 tsp capers
4 anchovie filets
2 cloves of garlic, smashed
1 Tbsp lemon juice
1/4 cup extra virgin olive oil

Add all ingredients except olive oil to the bowl of your food processor. Pulse to combine, then with the motor running, add the olive oil slowly until a firm paste forms. Serve with your favorite crackers or sliced toasted baguette.
